Our story

A small shop with one obsession: helping people ferment confidently at home.

We started with a single crock and a row of failed jars on a windowsill, convinced that fermenting at home should be reliable, not a gamble — so we built the pantry of tools and cultures we wished we had owned from the start.

How it started

Brinova grew out of years of kitchen experiments — sauerkraut that turned to mush, kombucha that never fizzed, a first cheese that refused to set. Each failure traced back to the same things: the wrong vessel, a culture past its prime, or a temperature missed by a few degrees.

So we set out to assemble a pantry where none of that is left to chance. We test every crock under a real ferment, source cultures that ship fresh and active, and write the guide we wish had come in the box. If a tool would not survive in our own kitchen, it does not make the shelf.

Today we work with small potteries and culture labs that share our standards. Every vessel is chosen for an airtight seal and an honest capacity; every culture is dated and dosed so you always know what you are getting.

The pantry today

We keep the range deliberately tight: stoneware crocks, glass jars and airlocks, live and freeze-dried cultures, a full cheesemaking bench and a handful of kits that hold everything a beginner needs. Enough to take you from your first jar of kraut to a waxed wheel of your own cheese — and nothing you will never use.

Reliability over novelty

A ferment you cannot repeat is a party trick. We choose tools and cultures that give the same clean result every time, so your tenth batch is as good as your best.

SCOBYs, kefir grains and starters are alive. We store them properly, ship them quickly, and replace any that does not take hold in your kitchen.

Honest capacities, dated cultures, plain instructions. We tell you the salt percentage, the temperature and the timing — the numbers that actually make fermentation work.

Every crock runs a real ferment in our kitchen; every culture is checked for vigour. We measure, we taste, and we note what a first-timer needs to know.

Pack

Cultures are stored cold and packed to ship fast and arrive alive. Kits are assembled by hand so nothing is missing when you open the box.

Support

Every order comes with guides, and our pantry team answers questions by email. Fermentation should feel like a craft you are learning, not a guess.
